3 eggs
1½ c. buttermilk or sour milk (To make sour milk, just add 1½ tsp. lemon juice)
1 tsp. soda
1¾ c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. oil
Heat waffle iron while mixing batter. Beat eggs well. Beat in remaining ingredients with rotary beater until smooth. Pour from cup or pitcher onto center of hot waffle iron. Spread to cover surface. Do not keep iron open longer than necessary. Bake until steaming stops. Lift carefully with fork. Makes 8 waffles so you might need to double this recipe.
