Au Gratin Potatoes

Make 2 cups medium white sauce: 4 T. butter

4 T. flour

1/2 tsp. salt

2 c. milk

Cook 8 to 12 potatoes, cube

Slice and cube 1 c. cheddar cheese

In a greased 13 X 9" glass pan, put a layer of potatoes; add half of cheese cubes and a half jar diced pimento. Sprinkle parsley flakes and Parmesan cheese. Pour 1/2 of the white sauce, and then repeat with another layer of potatoes, cheese, pimento, parsley, and Parmesan cheese. Pour remaining white sauce on top.

Blend 1 c. breadcrumbs and 1/3 c. melted butter or margarine together and sprinkle of the very top. Bake at 350 degrees for 1 hour. Serves 8 to 10.
