Mexican Rice

3 vine-ripened tomatoes
2 cups chicken broth, plus more as needed
1 tablespoon olive oil
1 large chopped onion
1 large finely diced carrot
1 large garlic clove, minced
2 cups medium-grain rice
2 teaspoons salt
1 bay leaf
1 whole serrano chile
1/4 cup fresh or frozen peas, thawed
1 lime of juice mixed in at end

Cut the tomatoes in half, and remove the seeds. Add the tomatoes and 2 cups of broth to a blender and puree. Strain into a bowl and reserve the liquid. Add enough extra broth to make 4 cups of liquid.
In a large saucepan, heat the oil over medium-high heat. Add the onion and carrots and saute for 4 minutes until the onion is translucent. Add the garlic and saute for 1 minute. Stir in the rice and cook until slightly toasted, about 3 minutes. Add the tomato broth mixture, stir and bring to boil. Add the salt, bay leaf, and the serrano chile. Reduce the heat, cover and simmer until the rice is tender, about 20 minutes. Remove the pan from heat. Scatter the peas over the top of the rice, cover, and let the rice stand 5 minutes. Fluff the rice with a fork, transfer to a serving bowl and serve.

Chicken Long Rice

2 chicken breasts worth of chicken (shredded)
2 to 3 cans of chicken broth
garlic and ginger (ginger should be the main taste of the dish, not much garlic)
4 oz. bean thread or rice noodle
Salt to taste
Sliced green oinion (I have no idea how much)

Start with
shredded chicken and broth however you want to come by it. (You can boil your chicken and use the chicken broth. Or you can use a rotisary chicken and chicken broth from the can.) I guess I would say about 2 chicken breasts worth and maybe 2 to 3 cans of chicken broth. Then add ginger and garlic. To taste. Ginger is the main taste of the dish. The noodles are a bean thread noodle that can be bought at a chinese food store. Or you can use rice noodles, I don't even know the difference. You need to boil water then take it off the stove then soke the noodles in that water covered for about 20 minutes. I use 2 (2oz.) packs when I make it. Then you add the noodles to the broth and chicken. Garnish with green onion if desired.

Pão de queijo (Cheese bread or cheese rolls)

Hana Sokol (these are a spot on knock-off of the cheese balls at the Brazilian grills -Tucanos,Rodizio, Braza Grill)

1 c. water
1 c. of milk
1/2 c. oil
1 tsp. salt
1 pkg. tapioca starch (450 g)
2-3 eggs
200 g parmesan cheese

Bring to boil in a big pan the water, the milk, the oil and the salt. Remove the pan from the heat and add the tapioca starch. Mix well with a wooden spoon and let it cool down. Put the mixture in a bowl, add the eggs and knead well. Add the grated cheese and keep kneading until the dough is smooth. Roll 1 tablespoon of mixture into small balls. Tip: Grease your hands with oil before making the balls. Wash your hands once in a while if necessary. Place the balls on a baking tray greased with oil or lined with baking paper. Bake the cheese rolls in hot oven (350 degrees) for about 20 minutes or until golden brown. Put the cheese rolls in a basket and serve them warm.


This Tapioca starch is the only hard thing. You have to buy it at an asian market. But they are dirt cheep. Only a 99 cents per bag. And it takes about one bag per batch. So I just buy a bunch at a time. The bags are really small and white because the starch is white. In her explanation she says you can use your bread mixer to mix the dough. So I assume that waiting for it to cool is only because you can't kneed it hot. So when I make it it goes straight from the pot to the mixer and when the consistency is right I start rolling it out (oiling your hands is really essential). It's pretty fast. Bob says that Brazilians probably kneed it just from lack of having mixers. Also I have found that the best way to preserve left overs is to refrigerate and then warm in microwave. The consistency changes if left out over night. They don't increase in size very much so you can put about 30 per baking sheet.

Caramel Chocolate Pretzels

1 tsp. vegetable oil

20 caramels

2½ tsp. water

36 pretzel nuggets

4 ounces semisweet chocolate, finely chopped, divided

Grease a cookie sheet with the vegetable oil.

Combine the caramels and the water in a saucepan and melt over low heat stirring frequently or in a covered dish in a microwave at full power for 1½ minutes. Dip the pretzel nuggets a few at a time in the caramel and remove with a fork to the greased cookie sheet. Refrigerate until caramel is firm.

Melt 3 ounces of the chocolate. Remove from heat. While the chocolate is still hot, mix the remaining 1-ounce of chocolate into the melted chocolate in 2 additions stirring until each addition is completely melted before adding the next. Lift the caramels from the sheet and dip one at a time into the chocolate. Coat completely and lift with a small fork. Shake off excess chocolate by tapping the fork on the edge of the bowl lightly. Remove any drips from the bottom by running the fork across the edge of the bowl. Slide the candy onto a cookie sheet lined with parchment paper or wax paper. Allow to cool until solid. Let chocolate set at room temperature or in the refrigerator. Makes 3 dozen.

Halloween Eyeballs

1 c. powdered sugar

1/2 c. peanut butter

2 T. melted margarine

Combine ingredients, and form into eyeballs.

Dip each ball individually into melted white candy melts or white chocolate chips, and cover completely. Place on wax paper and quickly place a colored M&M candy in the center of each ball. Cool completely until no longer sticky. Use red piping gel or tinted frosting to make eyes look blood shot.

Christmas Trail Mix

1/2 of a 1 lb. bag of large thin pretzels broken into smaller pieces

1 box of golden grahams

8 oz. of salted peanuts

2 ½ bags craisins

1 lb. white chocolate (not white chocolate chips)

Mix all dry ingredients. Melt chocolate in microwave for about 2 minutes, stopping half way through to stir. Stir well to make sure chunks are completely melted, heat further if chunks remain. Add melted chocolate to dry mix. Mix well…it takes a few minutes to make sure it is well coated.

Pour mixture out onto wax paper and spread out thinly to dry. Dries in about 20 minutes.

Washington state apple pie


Hana Sokol

Use crust recipe of choice, I use Karen’s.

Filling:

4-6 green apples (golden delicious is preferable) peeled, sliced, and cut into chunks

1/2 c. sugar

2 T. flour

1/2 tsp. nutmeg

1/2 tsp. cinnamon

Mix all ingredients and put in crust

Topping:

3/4 c. sugar

3/4 c. flour

3/4 c. butter softened

Use two butter knives to cut ingredients together or a piecrust mixer to mix ingredients. Add crumbled pieces to top of pie. Bake at 400 for 55 minutes.

Chocolate Revel Bars

Cookie:


1 c. butter

2 eggs

2 c. brown sugar

2½ c. flour

1 tsp. salt

3 c. quick oats


Filling:


12 oz. chocolate chips

1 c. sweetened condensed milk

1 tsp. vanilla

2 T. butter

1/2 tsp. salt


Cookie:

Place all ingredients into bowl and mix with hand mixer until blended. Place 3/4 of mixture in 13x9 pan and set aside for topping.

Filling:

Place all ingredients in bowl and microwave for 2½ minutes. Stir until smooth. Pour over cookie, and then sprinkle rest of cook mixture on top. Bake at 350 degrees for 25 minutes or until golden brown.

Chocolate Cake Mix Cookies

1 pkg. Devils Food chocolate cake mix

2 eggs

1/3 c. oil

Mix cake mix, eggs, and oil together. Batter will be thick. Drop by spoonfuls onto cookie sheet. Bake at 350 degrees for 7-10 minutes. These are yummy by themselves or work great for making homemade soft Oreos.

Rhodes Rolls with Parmesan

12 Frozen Rhodes rolls

1/2 c. softened butter

1/2 lb. grated Parmesan

Grease muffin tin and place a frozen Rhodes roll in each. Cover with saran wrap covered in Pam and place in warm area to soften for 2 hours.

Roll and coat each roll well first in the butter then in the cheese then place back into pan. Re-cover and let rise another 3 to 4 hours. Before baking I like to throw more grated Parmesan on top…just for good measure. Bake at 350 for 10 to 15 minutes or until tops start to brown.

Croissants Rolls by bread machine

Add ingredients into bread machine in this order:

Beaten egg plus water to make 1¼ c.

4¼ c. bread flour

2 tsp. salt

1/4 c. sugar

4 T. nonfat dry milk

10 T. butter softened and cut into thin squares

2½ tsp. bread machine yeast

Close bread machine and press dough setting. After finished place dough in greased bowl and put in warm place to rise for 1 to 2 hours until more than double in size. Divide dough in two and roll out first section. Roll into a very thin large flat circle.

Generously butter circle with about 4 to 6 T. butter. Cut dough like a pizza into 16 long triangle pieces. Roll each piece tightly from large end to small then place on greased cookie sheets - 9 per sheet.

Do likewise with other half of dough making a total of 32 rolls. Cover lightly with saran wrap covered with Pam and place in a warm place to rise for 3-4 hours.

Bake at 350 for 9 to 10 minutes or until top begins to brown. After pulling out the tray lightly coat rolls with melted butter and basting brush or spray butter. Yes, there is that much butter in these.

Banana Bread

3 bananas

1/2 c. butter

1 c. sugar

1 egg

1½ c. flour

1 tsp. vanilla

1 tsp. baking soda

1/2 tsp. salt


Bake at 350 for 20 minutes.

Red Pepper Potato Salad

2 pounds small Yukon gold potatoes or red potatoes, scrubbed

Salt and freshly ground black pepper

1/2 cup prepared mayonnaise

2 tablespoons Dijon mustard

1 large jar grilled red peppers diced or food processed

2 cloves garlic, chopped

1 tablespoon white wine vinegar

1 tablespoon smoked paprika

1/4 cup chopped flat-leaf parsley, plus more for garnish

Cut potatoes into 1-inch chunks and boil until fork tender.

Food process together mustard, peppers, garlic, vinegar, paprika, parsley, salt and pepper. Add mayo to food processor to mix. Toss potatoes with the mixture while still warm, mashing slightly to break them up. Serve warm or cold.

Sweet and Sour Pork

2-3 lbs. pork loin cut into 1/2-inch pieces

2 tsp. crushed garlic

1/2 c. vinegar

1/2 c. brown sugar

1/2 c. Shoyu (soy sauce)

1 can pineapple chunks (drain and keep juice separate for later)

2 T. cornstarch

In a pot combine pork, garlic, vinegar, brown sugar, and shoyu. Bring to a boil and cook for 30 minutes. Add pineapple chunks. Make a paste with the pineapple juice and cornstarch then add to meat to thicken. Eat over rice.

Chicken Cacciatore

8 boneless chicken thighs

Garlic salt as needed for marinating

2 eggs and sufficient flour for dredging

2 bell peppers sliced

3 c. spaghetti sauce

2 tsp. oregano

2 tsp. Italian seasoning

2 tsp. salt

1 tsp. crushed garlic

Season boneless chicken thighs with garlic salt to marinate in all day or overnight. Dredge chicken in egg and flour then brown in olive oil. In same pan cook sliced bell peppers. Add oregano, Italian seasoning, salt, and crushed garlic to spaghetti sauce of choice. In baking dish layer chicken, sauce, then bell peppers. Bake at 325 for 1 hour eat atop noodles of choice.

Potato and Mac Salad

6 potatoes

6 eggs

3/4 c. noodles (macaroni noodles)

2-3 grated dill pickles

Salt, pepper, parsley, and mayo to taste and consistency

Boil eggs and noodles. Boil potatoes until potatoes are soft with a toothpick. Carefully peel potatoes with a knife while still hot. Refrigerate potatoes, eggs, and noodles until cool. Peel eggs and dice. Dice potatoes. Mix all ingredients and refrigerate

Pear and Craisin Salad

Desired amount of lettuce and spinach mixed together

1-2 bags of crasins

1½ to 2 pears diced

Desired amount of feta

Almond slices

BLT Salad

12 oz. mini penne pasta (or pasta of choice) cooked

2 tomatoes diced

1 head of Romaine cleaned and broken

1 to 1½ lb. bacon or turkey bacon cooked and broken into small pieces

Dressing:

2 T. apple cider vinegar

2 T. Mustard (whole grain with garlic) Found in the deli section of Smith’s

3/4 c. Mayo

1/4 c. milk

2 T. Lemon pepper

Dress salad slowly to taste and add more lemon pepper if needed.


Feta Cilantro Dip

Hana Sokol


1 bunch cilantro (leaves only)

1/2 tsp. crushed garlic

1 jalapeño pepper

2 juiced lemons

1/3 c. olive oil

1 c. pecans

10 oz. feta

1/3 c. cold water


Add everything slowly to food processor to chop and mix well

This is a large recipe, I usually half it.
