Sweet and Sour Pork

2-3 lbs. pork loin cut into 1/2-inch pieces

2 tsp. crushed garlic

1/2 c. vinegar

1/2 c. brown sugar

1/2 c. Shoyu (soy sauce)

1 can pineapple chunks (drain and keep juice separate for later)

2 T. cornstarch

In a pot combine pork, garlic, vinegar, brown sugar, and shoyu. Bring to a boil and cook for 30 minutes. Add pineapple chunks. Make a paste with the pineapple juice and cornstarch then add to meat to thicken. Eat over rice.
