1 lb. lean pork tenderloin or chicken
1 T. soy sauce
1 small onion
1 green pepper
1/2 can pineapple chunks, reserving juice
3 T. oil
1½ T. cornstarch
Sauce:
1 T. ketchup
6 T. sugar
2 T. soy sauce
1/2 tsp. salt
3 T. vinegar
1/4-1/2 c. pineapple juice
1½ T. cornstarch
Cut pork or chicken into bite size cubes. Dip into soy sauce for 15 minutes. Add cornstarch, coating each piece. Fry until done, then set aside. Cut onion, pepper, and pineapple to desired chunk size. Make the sauce. Add pork or chicken, vegetables, and pineapple to the sauce, bring to a boil. Serve with crisp Chow Mein noodles or over rice.
