Strawberry Spinach Salad

1/2 c. sliced almonds

1/2 medium cucumber

1 pkg. (6 oz.) baby spinach

1½ c. strawberries cut

1/4 small red onion

Toast almonds. Cut strawberries in quarter or slices. Slice and cut cucumber. Slice onion into thin wedges. Add all ingredients into a bowl. Toss with dressing.

Dressing:


1/2 tsp. lemon juice

1/3 c. sugar

1 tsp. poppy seeds

2 T. white wine vinegar

1 T. vegetable oil
