Spinach Salad

2 bunches spinach

1/2 head lettuce

1 c. grated Swiss cheese

1 red onion, thinly sliced

12 big mushrooms, sliced

8 strips bacon

1 T. Poppy seeds


Dressing:


1 c. oil

1/2 c. sugar

1 tsp. Salt

1/2 c. red wine vinegar

1 T. Grated onion

1/2 tsp. Dry mustard


Marinate the mushrooms in the dressing overnight or at least 5 hours. Assemble all remaining ingredients just before serving and toss.
