Raspberry Bars

We had these at Hayley's bridal shower, June 2009.

1 c. soft butter or margarine

1/2 c. sugar

2¾ c. flour

1 c. powdered sugar

1/2 c. raspberry jam (homemade frozen jam is best)

Cream butter and sugar until fluffy. Add flour and work into dough. Divide dough into 4 parts and roll each into a long, thin log (the length of the cookie sheet and 1" to 1½ " in diameter.) Place on an ungreased cookie sheet. Use the side of your finger to press a groove in each strip of dough. Several "logs" can go on the same cookie sheet.

Bake for 10 minutes in a 375-degree oven. Spread raspberry jam in the groove of each log and return to the oven. Bake for an additional 7 to 8 minutes until lightly golden. Mix powdered sugar with 3 tsp. hot water. Drizzle the frosting along warm cookie bars. Slice with a sharp knife while still warm. Sprinkle sliced almonds on top of frosting if desired.
