Potato Cake

Chocolate cake that my mother used to make for special occasions. It was her mother's recipe that she got from her sister, Hazel, in 1917.

Cream in a mixer:

1 c. mashed potatoes

1/2 c. butter or margarine

2 c. sugar

2 squares melted unsweetened chocolate or 6 T. cocoa plus 2 T. melted margarine

3 eggs

Add the following:


2 c. flour

1 T. baking powder

1/2 tsp. cinnamon

1/2 tsp. cloves

1/2 tsp. salt

1 tsp. vanilla

1 c. walnuts

1/2 c. milk


Beat all together for 2 minutes. Pour into 2 well-greased and floured 9" cake pans. Bake in 350 degree oven for 35 minutes or until toothpick comes out clean.

Icing

2 squares melted unsweetened chocolate or 6 T. cocoa plus 2 T. melted margarine

4 T. melted butter or margarine

2 T. evaporated milk or enough to make icing the right spreading thickness

2 c. powdered sugar

1 tsp. vanilla

Beat with mixer to proper consistency for frosting cake.
