Peppermint Meringues

2 egg whites

1/2 tsp. peppermint extract

1/8 tsp. cream of tarter

2/3 c. sugar

2/3 c. white chocolate chips


Lightly grease a cookie sheet; set aside. In a medium mixing bowl beat egg whites, peppermint extract, and cream of tarter with hand mixture on high till soft peaks form. Add the sugar, 1 tablespoon at a time, beating till stiff peaks from. Fold in chocolate pieces.

Drop mixture by rounded spoonfuls 2 inches apart on the prepared cookie sheet. Bake in a 300-degree oven for 20 minutes or till firm and bottoms are very lightly browned. Cool. If desired, sprinkle each cookie with finely crushed peppermint candies before baking.
