Mini Cheesecakes

2- 8oz. packages cream cheese, softened

3/4 c. sugar

1 tsp. vanilla

1 T. lemon juice

2 eggs

Vanilla wafers

1 can cherry pie filling

Blend cream cheese with electric mixer; add eggs. Beat until well mixed, and then add sugar, vanilla and lemon juice. Line muffin tins with paper baking cups. Put a vanilla wafer in bottom of cups.

Fill 1/2 way with cream cheese mixture. Bake at 350 degrees for 12 minutes. Immediately spoon pie filling on tops. Let cool. Refrigerate.
