Spanish Tapas- Stuffed Peppers

from the kitchen of Jacquelynn Sokol (a knock-off version of Firefly stuffed pepper tapas in Las Vegas)


If you can find piquillo peppers use them, but I just bought a container of the mini sweet peppers (orange, red, and yellow)

Cream cheese
mozarella cheese
garlic

Mix these items together for the stuffing in whatever proportions you would like. Stuff the peppers and fry them in a little olive oil slowly until browned and cooked through. Place on platter and drizzle over spanish tomato sauce.

Tomato sauce:

1 can tomato sauce
green bell pepper
onion
garlic
salt and pepper
paprika

In olive oil cook chopped pepper and onion and garlic. Season with salt, pepper, and paprika. When veggies are cooked add tomato sauce and heat through.
