Sweet Muffins

2 eggs

1 c. milk

1/2 c. oil

3 c. flour

1 c. sugar

4 tsp. baking powder

1 tsp. salt


Heat oven to 400 degrees. If using dark muffin pans, reduce heat by 25 degrees. Grease bottom of muffin pans. Beat eggs with fork. Stir in milk and oil. Blend dry ingredients in; stir in just until flour is moistened. Batter should be lumpy. Do not over mix. Fill muffin cups 2/3 full. Bake 20 minutes or until golden brown. Muffins will have gently rounded and pebbled tops. Loosen immediately with spatula. Serve warm. Makes 2 dozen muffins. Stir in blueberries for wonderful blueberry muffins.
