Sheperd's Pie

This is an easy, economical recipe that we ate often when the kids were little.


1 lb. lean ground beef

1 1/3 c. instant mashed potato flakes

1 egg

1 tsp. salt

1/8 tsp. pepper

1 T. minced onion

1/4 c. ketchup

1 c. milk


Instant mashed potatoes made to equal 6-8 servings

1/2 c. shredded cheddar cheese

Heat oven to 350 degrees. Mix meat, 1 1/3 c. instant mashed potato flakes, egg, salt, pepper, onion, ketchup and milk. Spread in ungreased 9" pie plate. Bake for 35 minutes.

Prepare instant mashed potatoes according to package directions to equal 6-8 servings. (If you want, you can use fresh mashed potatoes instead. The instant ones are just easy and quick.)

Top the baked meat with mashed potatoes. Sprinkle with cheese. Bake 3 to 4 minutes or until cheese melts. Serves 4- 5.
