Pork Loin Tenderloin

Being from Iowa, Charlie's favorite meat is pork. This is one of his favorite Sunday dinners. Costco sells whole pork tenderloins for a good price. Cut it in half, freezing one for later.

1 pork loin tenderloin, 3 to 4 pounds

or pork loin sirloin roast, 3 to 4 pounds, bone in

Do not preheat oven. Season meat with 1 tsp. dried rubbed sage, 1/4 tsp. garlic salt, and 1/4 tsp. onion salt or use 2 tsp. Italian herb seasoning mix and 1 tsp. lemon pepper

Place tenderloin or roast, fat-side up in a shallow roasting pan. Roast meat, uncovered, in a 350-degree oven. Roast to 165 degrees. Pork tenderloins take about 1 hour and 20 minutes, roasts 2 to 2 ½ hours.

About 30 minutes before end of roasting time, insert meat thermometer with tip in center of largest muscle of roast. Do not touch bone or rest in fat. Continue roasting until thermometer registers 165 degrees. Test temperature in several places in meat. When done, cover with tent of foil. Let stand 10-15 min. before carving. Slice and serve. 3- 4 servings per pound.

Roasting tip: With a knife, lightly score (cut shallow lines across) top of roast at 1" intervals.
