Mexican Rice

1 c. rice

3 T. oil

1/2 c. chopped onion

Few shakes minced dried garlic

2 c. boiling water

1 tsp. salt

1/2 c. salsa

Heat oil in saucepan. Add rice. Stir and fry until light brown. Add the rest of the ingredients. Cook and simmer on low about 30 minutes with the lid on.
