2 eggs
1/2 c. milk
1 tsp. oil
2 to 3 large onions
Fritter batter:
1 c. flour
1 tsp. baking powder
1 tsp. salt
corn flake crumbs
oil
Beat eggs and stir in milk. Beat in flour, baking powder, and salt until smooth. Beat in oil. Slice onions 1/4 to 3/8" thick. Separate into rings. Dip in fritter batter. Shake off excess batter and place on waxed paper with thin covering of cornflake crumbs. Immediately cover with cornflake crumbs. Let batter set up on waxed paper for 5 minutes. Let set another 10 to 20 minutes on plate before frying. Heat oil to 375 degrees. Drop onion rings into hot fat and fry to golden brown, about 3- 5 min.
