Filling: 3 c. grated cheese. Use mixture of Jack and Cheddar or what ever you have.
Make sauce. I use 2 packages (dry) enchilada sauce. I like Lawry's, but you can use Taco Bell or any other brand. (Use only water to make the sauce.)
Fry 12 corn tortillas in a small amount of oil. Set aside.
Assemble enchiladas using 1/4 c. cheese inside each tortilla. Roll and place seam side down.
Pam a glass casserole dish (9 x 13"). Place enchiladas close together. Pour all the sauce on top. Add extra shredded cheese and bake at 325 degrees for 30 minutes.
