Brown Rice Pudding

Carol Sokol Welty, Charlie’s sister.

1 c. brown rice

2/3 c. packed brown sugar

2 tsp. vanilla

1/2 c. raisins

1/2 tsp. ground cinnamon

1/8 tsp. ground nutmeg

1/4 tsp. salt

1 c. water

1 c. milk


Rinse brown rice. Place all ingredients in saucepan or heat resistant bowl. Bring to boil on stovetop or microwave. Cook on low until all liquid is absorbed, stirring occasionally. Can be cooked in crock-pot on high for 3 hours.
