Banana Bread


Hayley Sokol Bahr, from the kitchen of Katie Berntsen.


2 c. flour

1 tsp. baking soda

1/2 tsp. salt

1/2 c. margarine

1 c. sugar

2 eggs

1 c. mashed bananas (2-3 medium-size)

1/3 c. milk

1 tsp. lemon juice

1/2 c. chopped walnuts


Beat margarine. Add sugar. Add eggs and bananas. Blend well. Combine milk and lemon juice. Add to mixture. Add dry ingredients. Blend well, using low speed on mixer. Stir in nuts. Pour into well-greased 9x5x3 loaf pan or 2 smaller pans. Bake at 350 degrees for 45 minutes or until toothpick inserted into center comes out clean.
